Looking for a unique dining experience for a perfect date night? What could be more unique than dining underwater? Yes, I’m talking about underwater dining at Ocean Restaurant by Cat Cora, a brilliant dining concept by celebrity chef Cat Cora – the only female Iron Chef and the first female chef to be inducted into the American Academy of Chefs Culinary Hall of Fame.

The restaurant is located inside the S.E.A. Aquarium – the world’s largest oceanarium. As we entered the foyer, the first thing we noticed was the expansive observation panel providing diners a panoramic view of the marine life. In the main dining room, other design elements – the interior lighting domes, the materials and fabrics in midnight blue and aquamarine, and even the table centerpiece containing shells and stars – reinforce the underwater theme.

As we geared up to get a taste of Cat Cora’s signature dishes, we savoured the magnificent view of the open ocean habitat, and it just has a very calming effect. The 3-Course Set Lunch (S$55++) comprises of starter, main and dessert. The restaurant also has a special Vegetarian 3-Course Menu. The food is characteristic of Chef Cora’s Mediterranean-Californian cuisine with an Asian flair, using the freshest produce from around the region.

I opted for the vegetarian set, which didn’t disappoint although it doesn’t have much by way of choice. The Cauliflower Soup with crispy bread, caramelized onion and cheese was smooth and delicious.

From the mains, I chose the Aglio Olio and loved how the pasta was surrounded by sautéed fresh tasty baby vegetables. Dessert followed, which was Vacherin – a pistachio meringue with citrus marmalade and orange yogurt sorbet. continue reading
